These are dairy and gluten free.
100g (4oz) tinned Tuna
1 teaspoon of onion salt
2 tablespoons of rice flour (Doves Farm)
Half a teaspoon of black pepper
1 teaspoon of gluten free baking powder
1 teaspoon of dried parsley
Oil for shallow frying
1. Mash the tuna and then add all the other ingredients except the oil.
2. Form a stiff paste with the mix and then roll into 1" balls. If the mixture is sticky, add another tablespoon of rice flour.
3. Heat enough oil in a pan to shallow fry. When the oil is sufficiently hot, fry each side of the cutlets for 3 minutes. When golden brown, drain off excess fat with kitchen paper.
4. Makes five.
