A fat free snack which is gluten, dairy and wheat free. Excellent served with Swedish Glace ice cream.
1 level teaspoon of corn flour
Quarter of a teaspoon of Cream of Tartar
175g (6oz) Caster sugar
1 teaspoon of vanilla essence
3 egg whites
1. Pre-heat the oven at 140C, Gas mark 1.
2. Prepare a baking sheet with non-stick baking parchment.
3. Whisk eggs in a large bowl.
4. Slowly add the sugar (third at a time)
5. Add the sugar and corn flour.
6. Beat until stiff.
7. Add the vanilla essence. Stir it through.
8. Place mixture into shape required, bake for 40-50 mins.
