This product is dairy, fat and gluten free.

3 eggs

75g (3oz) Caster sugar

35g (1.5oz) Rice Flour (Doves Farm)

35g (1.5oz) Gluten Free flour (Doves Farm)

6 Tablespoons of jam (Any flavour)

(sugar for rolling)

20cm x 30cm Swiss roll tin

1. Light oven 200 C, Gas Mark 6.

2. Line and grease a Swiss roll tin.

3. Whisk eggs and sugar together until the mixture leaves a trail.

4. Fold in flour.

5. Turn mixture into Swiss roll tin.

6. Bake till golden.

7. Sprinkle a sheet of greaseproof paper liberally with sugar and place on a slightly damp, clean cloth.

8. Turn the sponge out onto the sugared paper and remove the lining paper.

9. Trim off the edges of the sponge.

10. Spread the sponge with jam and carefully roll up from the short edge, using the cloth to help.

11. Transfer to a wire rack to cool.
