This is a very healthy low fat soup that is quick to make. It is dairy and wheat free.
500g (1lb) Peeled chopped carrots
75g (30z) Chopped onion
2 teaspoons of Swiss Vegetable Bouillon (vegan)
3 teaspoons of dried coriander
800ml hot water
Salt and pepper
1 tablespoon of oil
1. Add the oil to the pan and heat gently.
2. Fry the onion for 3 minutes.
3. Add the rest of the ingredients and boil for 20 minutes.
4. When the carrot is completely cooked, blend with a hand held blender until completely smooth.
